Silas is the owner and Head Chef at Pepper & Salt restaurant in beautiful Denmark, Western Australia. His food focus is using locally-sourced produce and simple techniques to give his dishes the texture and subtle spice of his Fijiian-Indian heritage.

Overlooking the vineyard at Forest Hill winery and the bushland beyond, dining at Pepper & Salt is a feast for the senses, an evocative experience. Sweeping views and Forest Hill’s cool-climate wines complement Silas’ use of spice to create full-bodied dishes, flooded with flavour and soul.

Part of the Denmark community since 2010, Pepper & Salt restaurant is a popular venue for lazy lunches, intimate dinners, weddings, private events and masterclasses.

Outside of Pepper & Salt, Silas is passionate about children’s rights. His work with the Djinda Ngardak Program, Great Southern Grammar and Denmark Surf Lifesaving Club and other community groups gives kids a culinary experience and boosts self-esteem.

Empowering children to learn about food builds independence and confidence. Encouraging healthy, flavourful eating is part of Slias’ on-going community contribution.
